The owners of Hebron, Jemma and Paul planted the vineyard in West Wales in 2010 after having spent almost 10 years converting an established vineyard into an award winning non-intervention organic vineyard in Andalucia, Spain.
They believe that zero intervention viticulture without the use of any pesticides, herbicides, fungicide or fertilizer is the key to growing quality grapes that reflect the unique Welsh terroir. The vineyards use regenerative viticulture and are organically maintained. Zero intervention in the vineyard also extends to the winemaking process. All wines undergo spontaneous fermentation thanks to the grape's wild yeasts, unblocked malo-lactic fermentation and gravity led clarification without filtration. The wines are fermented in Amphoras (Spanish Tinajas) brought back from Spain. The wines are made in collaboration with David Morris from Mountain People Wine.
