It is characterized by its lemon-yellow color. Clean and bright. Abundant release of carbon dioxide, highlighting the elegance of its fine bubbles. Once the varieties have been hand-picked separately, they are crushed and destemmed. Once in the stainless steel tanks, all the free-run juice is removed a few hours later to ferment separately at a temperature of 16°C, thus obtaining the base wine. A second fermentation transforms the resulting wine into a sparkling wine. Sugar and yeast are added to the same bottle. This is the traditional method, called "champenoise." The cava is aged for 15 months, in this way the yeasts contribute all their aromatic character to the cava, giving it a strong personality. Once the sparkling wine has aged in the cellar, the bottles are stirred in the so-called "pupitres." The bottle is rotated until all the sediment has settled in the neck. This is when these deposits can be removed. Once the bottle has been disgorged, the corresponding amount of liqueur d'expédition (brut) is added.
