Valdaya's El Valiente is pure Tempranillo sourced from two estates located in Gumiel de Mercado and Baños de Valdearados (Burgos). The vineyards range in age between 30 and 50 years. Both plots have deep clay soil, which allows humidity to be retained in the soil even in dry periods. In addition, the plots are oriented to the northwest and at an altitude of 850 to 900 meters, which provides for an elegant wine, with freshness and acidity, medium concentration and is very fruity. In the winery, the grapes are de stemmed and vatted in small stainless steel and concrete tanks. Once the alcoholic fermentation is complete, the wine is transferred to 500-litre fine-grade, lightly toasted French oak barrels, where it undergoes malolactic fermentation and is aged for 12 months.
