Creamy foam, with refreshing acidity, ample volume and tasty reminiscences of lemon mousse on a brioche background. Very long in the mouth with good maturity and complexity. In attack it is sweet, fruity and of good maturity, with hints of apricot, melon and grapefruit with hints of honey. On a background of fennel bulb, hay and white flowers. Finally, a tasty, balanced and fresh mid palate, with a frank aftertaste finish with pleasantly bitter hints.

    Made by the traditional champenoise method. This Brut pas dosé comes from Viura grapes from vineyards over 35 years old in the Valle del Ángel area in Cuzcurrita. For the base wine, after the harvest, the whole bunches are gently pressed to extract the tear must, which also ferments at 18ºC slowly, the fine lees working to provide structure and unctuousness. Finally, during the second fermentation, a minimum of 15 months has passed confined in the bottle, with subsequent manual disgorging without freezing.
