70% Shiraz and 30% Cabernet Sauvignon
The 2015 Organic Red consists of a blend of 70% Shiraz and 30% Cabernet Sauvignon sourced from Organic vineyards around the Western Cape. The grapes were sorted, destemmed and crushed and wild, spontaneous fermentation took place in a combination of concrete tanks and open top stainless steel fermenters using the submerged cap fermentation technique. 40% of the wine spent 11 months in older oak barrels after which the wine spent another 2 months in stainless steel tank before bottling.
