The Central Otago region, secluded in the middle of the southern end of the South Island, has over the last decade or so, become world famous for its Pinot Noir wines. Nearly all the fruit comes from the Golden Terraces Vineyard with 3% from the Woolshed Vineyard, harvested over a ten-day period. Gently de-stemmed, the grapes are cold soaked followed by a short ferment and pressing, the wine is matured in a mixture of tank and barrel for about nine months.
