David Girard started the Domaine in 2003 when he was only 20 years old, along with his brother, Luc, who joined him in 2011. The domain is located in Humbligny, midway between Sancerre and Menetou-Salon. They are developing viticulturally and modernizing technologically. He is famous for his elegant wines from Menetou- Salon, made of Sauvignon Blanc, as well as a smaller production on Pinot Noir.
Located directly southwest of Sancerre, this relatively small appellation produces a similar range of high-quality white, red and rosé wines that offer excellent value. The vineyards are around 7 years old with a southern exposure. They are planted in clay and sedimentary limestone soil. They are dating back to the jurrasic periods (Kimmeridgian). Traditional to reasoning protection and work of the soil.
Limestone sediments dating from the Upper Jurassic (Kimmeridgian and Portlandian) houndstooth.
Cold maceration for 3 to 5 days then vinification in thermo-regulated stainless steel vats with punching down and pumping over per day to extract the finesse of the aromas of Pinot noir without too much tannins for light wines all on the fruit.
