    Vineyard:

    The vineyards are situated on the hills between Gavi and Novi Ligure, at an average
    altitude of 350 metres; the vines are trained by traditional Guyot system (average
    density of 4.000 vines/ha with a yield per hectare of 66 hl of wine), on clay-sandy soil
    without many stones.

    Vinification and ageing:

    The grapes is picked by hand towards the end of September; the traditional
    vinification is by the white wine method in small steel vats at a controlled temperature
    (16/17°C); the alcoholic fermentation is carried out with selected yeasts and without
    using finings in order to preserve the structure of the product as much as possible; the
    malolactic fermentation is held partially to maintain good acidity, synonymous with
    pleasantness and longevity. Then the wine rests on its lees, in inox at low temperature,
    to preserve the aromas.
