Fiano boasts a long tradition in Puglia. In this version it is characterized by floral aromas, freshness and an extreme ease of drink.
Giustini’s vineyard is close to an inland sea, Mare Piccolo. The vines are between 10-15 years old, and Guyot* trained on fertile soils. The grapes are hand-picked in the second half of September. The bunches are de-stemmed given a cold soak (chilled maceration*) before a temperature-controlled fermentation between 22-24ºC, using selected yeasts. The wine is aged in steel for a few months before bottling.
The philosophy of Giustini Wines:
‘We have an indissoluble connection with our land and with each of the indigenous varieties we work. The goal is to preserve their typicality and characteristics in order to enhance and never distort them. Minimal interventions in the vineyard and targeted refinements in the cellar give our wines the aroma and scents of the grapes from which they come to life.’
