The name Lacryma Christi comes from an old legend; Lucifer stole a piece of paradise to generate the gulf of naples so Jesus cried and where poured his tears, the soil became fertile generating the grapes used fro 'Lacryma Christi' that in English means 'tears of Christ'.
The grapes, harvested by hand at full ripeness, are severely selected and pressed whole, so only the seedlings must first be decanted in cold and then inoculated for alcoholic fermentation. The fermentation takes place in low temperature steel. The wine is aged for 4 months sur-lie and at least 2 months in the bottle.
