    • Food Matching: Rice in a cassola (saucepan) . It's easy to do. In a “cassola” or saucepan, with oil fry the pieces of rabbit and pork ribs until golden brown and remove them. In the same oil, make a “sofregit” sauce with onion, garlic and tomato. When the “sofregit” sauce is dark, re-add the pieces of meat and and mix it. Add the rice, strain it with the “sofregit” sauce stirring for a couple of minutes and pour the boiling water. After a while, add the peas with some baking broth. Let it boil 15 minutes approximately. If you cook, you see water is needed, add it, always boiling. And this is it.
    • Vineyard: Vins Petxina supports the environment and promotes the creation of organic wines and the transformation of conventional to organic vineyards. They are wines of little-known style, area or variety, each having their own unique personality. All the grapes come from the vines owned by the winery CELLER 9+, located around the Mediterranean village La Nou de Gaià, 5km far from the sea, close to Tarragona. The vines are old and the viticulture is based on the traditional techniques (following the lunar calendar), always putting quality first. "The vines are small and different. Some face the sea, others don’t. The soil is different from one row to another in the vineyard, but overall they are poor soils. We prune in green to reduce production and get more concentration and better maturity of the grapes. The area has a strong effect from the “marinada” (Mediterranean wind), cooling down the temperature and preventing it to rise over 31-32 ºC on the hottest days of the summer. "
    • Vinification: In the cellar we control the productions in small lots. We use the underground cement deposits for the fermentation and keep the wine in a cooler temperature. We make separated vinifications per variety and we blend them before the bottling. We only use grapes to make this wine. Compared to the white colour in inks or pigments it can only be achieved if the base is white and no other colour is added. As we do with our wine: we don't add anything besides the grapes. This is why we call it BLANC, even if it is a red wine. Only the cleanest and healthier grapes can be used for a natural wine.
