The mountain water process is an all-natural decaffeination process. It involves soaking the coffee in water at varying temperature's and pressures which extracts the caffeine. This caffeine full water is filtered through an activated charcoal filter to remove the caffeine. This water is re-used to decaffeinate further batches. The beans are then dried and packaged.
The process allows the coffee to retain its original characteristics without using any chemicals. The process can often be costly, as often coffee needs to be sent to be decaffeinated before being roasted increasing shipping costs. Hence, good quality speciality decaf is sometimes hard to find or can be expensive.
