In 1929, after the ravages of the First World War and the start of the global crisis, a handful of winegrowers united and created the Mailly Champagne producer company. They decide to produce wines of great expression from the only grapes of their village classified as grand cru.
The Mailly Grand Cru vineyard covers 70 hectares, for 480 plots (the majority of which faces north, a guarantee of finesse and balance). The distribution of grape varieties is 75% pinot noir and 25% chardonnay. 80 winegrowers take the greatest care of their vines with sustainable and reasoned viticulture. Perfect knowledge of each plot and plot-by-plot vinification allow the cellar manager to equip himself with an exceptional palette of still wines, the keystone of the blends. It also has a treasure of reserve wines from more than 10 different vintages.
Mailly Delice is exactly the same composition as in the case of Brut Réserve, i.e. Pinot Noir 75% and Chardonnay 25%, A blend of base wines from over 600 plots, combined with 30-40% of reserve wines, i.e. aged in steel tanks and oak barrels with over 10 different vintages. Champagne with a deep golden color, the aroma is dominated by apple pie, ripe pears, ripe citrus, caramel and gingerbread spices. It is full in the mouth. The persistent effervescence is enhanced by the abundance of yellow fruit, mango and candied citrus peel. It will create a successful combination with tarte tatin, soufflé, Indian cuisine, in particular tandoori dishes, dishes with sweet and sour sauce, foie gras or roast duck with apples and honey.
