    History
    It was during the Age of Enlightenment that the history of Chanoine Frères took on its full significance, when it obtained royal authorisation to dig the first cellars
    in Epernay and to sell champagne not in barrels but in bottles. More recently, Chanoine Frères wanted to pay tribute to the bold and courageous young women of the Russian nobility who contributed to the international reputation of Champagne throughout the exciting century of the Enlightenment.
    The Champagne province is located near the northern limits of the wine world. The high latitude and mean annual temperature of 10 °C creates a difficult environment for wine grapes to fully ripen. Ripening is aided by the presence of forests which helps to stabilize temperatures and maintain moisture in the soil. The cool temperatures serve to produce high levels of acidity in the resulting grape which is ideal for sparkling wine.
