Estate grown Sauvignon Blanc, farmed organically and made with 100% whole bunch carbonic maceration, and wild yeast fermentation for an orange wine. Free run and pressed juices are transferred to 500L French oak and acacia barrels for a period of five months. It is then bottled unfiltered. The winemaking ensures a complex and rich character with notes of apricots, ginger, cumin and fennel which combine on the palate with a subtle texture and fresh acidity.

Pyrenees is a wine-producing region in the western part of Victoria, near the southern coast of Australia. Dotted with high-quality boutique wineries, the region is known for its cool-climate styles of Shiraz, as well as sparkling wines made in the traditional style from Pinot Noir and Chardonnay. It is named for the Pyrenees mountain range in Europe, as early settlers thought that the hills here resembled those that separate France and Spain.
