Grenache contributes the raspberry and strawberry palate while Mourvèdre adds structure and a lingering spice. The splash of aromatic field blend wine emphasises strawberry, musk and turkish delight aromas. Early picking allows for a textural mouthfeel, luminous rose-diamond colour and crisp natural acidity giving great length. Made as a true rosé, each vineyard is picked with a view to retaining natural acidity and relying on the ancient vines to supply ample flavour despite the early harvest. Each vineyard will see between 6 - 18 hours skin contact, which during this early ripeness imparts only modest colour to the blend. Cold fermented in a temperature controlled inox fermenter using a combination of indiginous and selected yeasts to develop and protect delicate aromas. As a stylistic choice,no fining agent is used throughout the winemaking process and only minimal SO2 is added prior to bottling.
