100 % Malbec grapes with a yield of 35 hl/ha. The grapes are harvested by hand into small 20kg trays from late March-early April. The grapes are then meticulously sorted in order to select the best grapes for this wine. Double selection is performed: the first selection of bunches and a second selection grape by grape.
Cold maceration for 5 days followed by fermentation at controlled temperatures of 28°C with 4 pump-overs per day and a long maceration of 25 days. 100% is then aged in French oak for 12 months.
