Light straw yellow, shiny, with pale green reflections. The perfume is aromatic and let its floral hints spread in the air. It recalls mature fruits with yellow pulp and shades of nutmeg. The taste is structured, with a good balance and a great persistence.
Darling Cellars Lime Kilns is a blend of 81% Chenin Blanc, 16% Viognier and 3% Chardonnay shows a lot of tropical notes like peaches apricot and citrus fruit like orange peel. This is a seriously complex wine that has a great mid palate with good length and ageing potential.
Aromas of candied fruit and notes of honey, eucalyptus and citrus fruits as well as an intriguing touch of nutmeg and caramel. The palate is dense and rich, packed with dried fruit flavours such as apricot, pineapple and fig, with a delicious sweetness in balance and a refreshing finish.
This wine exhibits an aroma of Dutch apple pie, spice and nutmeg, with a creamy texture and balanced acidity. The medium body and juicy peach and apricot flavors are perfectly balanced, leading to a crisp finish.
Bold flavours of smooth butter, this Chardonnay has a very unique flavour profile. It’s incredibly balanced, not too sweet or dry nor is it too soft or acidic, it’s just right. The fruity notes of melon and pear make themselves apparent on the palate before being washed away in this full bodied white wine.
This wine, aged in Bourbon Barrels has attractive smoky notes to the nose and palate with lasting impressions of richly flavoured vanilla, dried herbs and a hint of caramel.
Traditional vinification: a manual harvest, minimal vatting, pumping over and punching down without excess to reveal the full aromatic range drawn from this great terroir. ageing lasts on average 15 months in oak barrels, with a maximum of 50% new barrels, and 3 months in vats before bottling.
