5TH GENERATION Grant Burge is a 5th generation Barossa vigneron. The history of the Burge family and their long association with winemaking in the region can be traced back to March 1855, when noted tailor John Burge immigrated to the Barossa with his wife Eliza and their two sons, Meshach and Henry.
THE WINEMAKING The Sauvignon Blanc fruit was picked in the cool of the night, crushed and destemmed immediately to maintain fruit and varietal flavour, while the Semillon was handpicked, chilled and whole bunch pressed for purity and finesse. The fruit was mostly cold fermented in stainless steel at 11 degrees. 26% was fermented in 1-5 year old French oak with 3 months of battonage (stirring of yeast lees). Oak fermented batches were fermented on full solids with wild yeast for extra complexity.
