Cafayate’s most characteristic wine bears the name of our winery. The day of the harvest is eagerly expected, and once the grapes reach the optimum point of ripeness, they are hand-picked in the early hours of dawn. This careful process gives as a result a greatly complex, extremely fine wine. El Esteco is robust yet elegant; a high altitude wine, intense and traditional, it can proudly represent the Calchaquíes Valleys and take our name to the rest of the world.
Concentrated bunches of small grapes are manually harvested in 18Kg plastic bins. Pre-fermentative macerations at 5°C in stainless steel tanks. Utilization of both native and selected yeasts for the fermentation process. Post fermentative macerations, totalize 25 days. Natural malolactic fermentation is carried in both American and French barrels of first, second and third use. Finalizing this process the wine is aged in the same oak barrels for 12 months. A careful selection of barrels is made, looking for light toasted oak in order to outstand the freshness of the fruit. The wine is bottled unfiltered, and kept at the winery for 6 months.
